Monday August 13th 2012 Japanese traditional knife making will be demonstrated at our San Mateo Store, The same craftsmanship that has been used by Kikuichi for over 700 years will be performed for you to see in person. Don't miss the drawing for one of the knives crafted that day. One lucky winner will watch their knife being made!

Above are examples of knives to be made at the demonstration & freehand forging. These knives are pure White #2 carbon, approx. 7” long and single bevel for right-hand use. Pictured on the left is a Usuba or Nakiri vegetable knife & on the right a Mioroshi or Funayuki chef knife.

About  the  Craftsmen


Mr. Tadashi Enami is a second generation forging master from Sakai city.  He has 28 years of  forging master status and he specializes in Wakashizuke, a  forging technique which combines two kinds of soft and hard metal to create a superior blade.  He was designated a traditional crafts-person in 1997 by the Japanese Minister of Economy, Trade and Industry. This designation is given to select expert craftsmen involved in traditional arts.

 

Mr. Yuzo Tani is a second generation forging master from Sakai city. The craft was passed down from his father, and has developed his own expertise from over 30 years of forging experience. Like many traditional knife makers, his is a family business that will hopefully continue for many generations. His forged knives are sold throughout many high-end kitchen stores in Japan.

Yes Bren, agree with you....good point.....really what it seems to come down to is money vs. theRead More good of the community and richness of traditions. And all despite the Master Plan for that site in San Mateo that seems to require an ice skating rink or similar recreational facility AT THAT SITE, and all despite the fact the Ice Chalet would like to continue operations there. The Developer has made it difficult to impossible for any ice rink to operate there (tricky it seems)....so they can get a cookie cutter retail outlet in ? .....very, very sad for the youth of the community.
